  • Soya chunks have a firm texture. They are often used as a meat substitute in vegetarian and vegan dishes due to their ability to mimic the texture of meat. Soya chunks are typically sold in a dehydrated form and need to be rehydrated before use. They can be soaked in hot water or broth for about 15–20 minutes until they become soft and plump. After soaking, they can be squeezed to remove excess water before cooking.
