  • “Kolhapuri Jaggery” refers to a specific type of jaggery also known as Bucket Jaggery. Kolhapuri jaggery typically has a deep, golden brown color. The process of making Kolhapuri jaggery involves extracting juice from freshly cut sugarcane, which is then boiled in large, flat pans. The juice is stirred and skimmed continuously until it thickens and concentrates into a paste. This paste is then poured into molds to set into the desired shapes.
